October surprise. After wrestling with a cold for nearly a month, food is finally starting to sound good again. So the weekend was a good time to shuffle through Safeway in search of inspiration. I'm not sure what brought to mind pseudo-paella. No saffron, no fresh seafood. But a great one dish meal nonetheless. Chicken legs were cheap, so although I've never cooked with them before, in they went (minus most of the skin). Then some low fat hot turkey sausage, garlic, onion, olives (green and black), a can of chopped tomato (no salt), a can of chopped clams, a handful of cooked shrimp, uncooked rice, chicken broth, and some wine. Brown the chicken, sausage and onion, add the rest, season to taste, pop that old cast iron pot into the oven until the liquid is absorbed and the rice cooked. Add some white wine, a simple salad with homemade yogurt dressing, assorted hot sauces, fresh ground pepper, and some hot bread. Ahhhhh. Note the wooden rice bowl, which we use for bread, that was made in the old Oahu Prison woodworking shop years ago.
