We made dinner for a friend on Saturday night, a pork roast seasoned with garlic, thyme, red pepper, and a tablespoon or so of Mick’s hot garlic jelly. Pretty simple. Cook until done (consulting an instant read thermometer).
Last night we got home late. Looked in the fridge. Leftover pork. So I cut up a couple of potatoes, placed in a small pot, covered with water, set to high until boiling (covered). They take about 30 minutes to be ready to mash. While waiting, I diced an onion and set it browning on medium heat. I added a bit of water every five minutes or so. You want the onion to brown but not burn too much. About six minutes before the potatoes were ready, I threw several slices of pork in with the onions.
I should have added a bit of lemon juice in this last stage, but forgot. A banana, cut up any which way, would also have worked well. Again, I forgot.
Then the potato pieces were scoopped out into a large bowl, I added a blop of margarine, then used small hand mixer to mash, using a bit of warmed skim milk to moisten to taste.
Meanwhile, Ms. Meda was making a wonderful green salad with Costco mixed greens, tiny tomatoes, heart of palm, etc.
A bottle of cheap wine and we were in business.

Mick’s hot garlic jelly! Where do I get it?
Mick’s Peppouri. We originally learned about it while wandering through the Pike Place Market in Seattle. They make a slew of different pepper jellies ranging in heat from very mild through tongue numbing. Sometimes I go for their Beyond Buzztail, but usually slow down at Buzztail. Plenty hot. The other hot jellies are really not too hot. I like some of the flavored ones–lime, garlic, etc–for cooking.
Last time I ordered–you could order a box full and shipping was free, even to Hawaii. Not sure if that’s still the case.
