Feline Friday: A crustless quiche, a bottle of wine, and a cat

Welcome to another Feline Friday, featuring six of our eight cats in Kaaawa.

Last night was a little adventure. I set out to make a crustless quiche, taking hints from several recipes.

It isn’t that I don’t enjoy a quiche with a wonderful crust that soaks up all kinds of good stuff. It’s just that that crust carries a bunch of unnecessaries calories and fat.

Hence the idea of going crustless.

The quiche made use of simple ingredients. I threw some chopped onion in a pan, along with a low-fat sausage cut into small pieces, followed by a half of a zucchini, in thin slices. A few mushrooms, sliced. Garlic, hot pepper, thyme. When cooked, it sent into the bottom of a pie plate. Three slices of low fat swiss cheese went on top, then I poured in a mixture of nonfat half-and-half and three eggs, well beaten. 35 or 40 minutes in the oven at 375. On the table, one of Meda’s great salads, some hot sourdough bread, a bottle of red wine, and a cat. That happens to be Ms. Kili in the prime spot. No, she really didn’t want any quiche, but she did want the right to check it out.
