Election Eve table

Our dinner table on election eve, that is, not yet another data table with analysis of polling stats. We were ready for an easy meal, and this was just about perfect.

We started out with a pouch of this chicken tikka masala sold at Costco. It was in the freezer, and I pulled it out to thaw earlier in the afternoon. In my experience, it is surprisingly good.

In any case, I added some Whole Foods multi-colored carrots, and sliced a few mushrooms and dropped those in, along with a handful of raisins. Heated until the carrots were cooked. And I served it into bowls over roasted cauliflower with olive oil, garlic, salt and ground pepper.

Meda prepared some toppings–chopped peanuts, cilantro, hot pepper jelly, bacon bits, and a chopped hard-boiled egg. Then a plate of tomatoes, olives, and baby carrots, with a little dip on the side.

Served in vintage shallow bowls by Blue Ridge Potteries, Blue Ridge pattern. With a bottle of red wine.

    I’ve seen this product at Costco but was a bit reluctant to buy it. Thank you for the recommendation! I’ll be buying it the next time I’m there. I have decided it would be best for you to adopt me! Anyway, thank you for your kitty-kat updates and dinner recipes. I really appreciate it as I used to live across from your house on Kealaolu Place which wasn’t very nice.

    I bought this at Costco based on your recommendation. Had it last night, you are right, it is really good. It is also easy to improve by adding veggies. I added sliced carrots, chopped kale, garlic and onion.
