A second try on the one-pot challenge

For the doubters out there, this was our production last night (Tuesday in NZ, Monday in Hawaii).

We again had a failure of will as we looked into various downtown restaurants.

Our menu:

Chicken & garlic ravioli in a tomato sauce I made up with a can of diced tomatoes, mushrooms, and basil, the latter two ingredients left over from the night before. Unfortunately, the garlic that had been left over was apparently “cleaned up” when the room was serviced, and was nowhere to be found. Green salad with the last of the mushrooms, using a salad mix that had a nice variety. A simple oil-vinegar dressing. A bit of wine. We were all set. For dessert, chocolate covered ginger candy, made here in NZ. Quite an interesting taste.

    All photos show up fine now, Ian. I guess cooking keeps you busy while Meda is at the conference. It’s too bad you have not tasted typical New Zealand fare yet. You should make the effort. I loved Indian food!

    Hey Ian, would you mind bringing back some of that chocolate-covered ginger? I’ll happily buy it from you. I lived in NZ for 3 months & it was one of my fav desserts.

    All of my returns to Hawaii after visiting my NZ homeland have involved bringing back chocolate-covered candied ginger. Glad you discovered it. My last observation, three years ago, was the amazing Asian influx, particularly from mainland China. Long time since I left, 40-plus years ago, but it was a pakeha (haole) country then with 10 percent Polynesian and Asian minority. City centers are quite different now. You can find sushi restaurants in Invercargill.
