I have to admit that my pizza making is nowhere near as refined as Ernest Murphy’s, spelled out in his fabulous Pizza Essay.
But I do my best. Homemade crust, mostly whole wheat with a little white flour and a handful of cornmeal. Homemade sauce. Last night topped with low fat pepperoni, chopped black olives, a few chopped green peppers, and anchovies. A sprinkle of cheese, although here we got lazy and used shredded “Italian Cheese”. Cutting corners, yes, but it saved time and energy.
Meda made a beautiful salad with local grean leaf lettuce and avocado from a friend’s yard.
Hot pepper flakes and a bottle of “Broke Ass Red” on the table, along with Mr. Toby, who can be seen in the background. Luckily he wasn’t too keen on pizza.

Care to share recipes? A couple weeks ago, I ventured to make my very first pizza. As I didn’t really learn how to make anything as a kid, I usually rely on allrecipes.com for last-minute guidance. This only really works w/ dishes common to the American diet – have yet to see Indian recipes on there, for example. Anyway, I found and used this dough recipe: http://allrecipes.com/Recipe/Pizza-Dough-II/Detail.aspx . Used all whole wheat, no bread flour, since that’s all I had, which made it grainier. Quickly discovered kneading is very important, as is good, non-Kraft cheese and a fabulous sauce. I need to find a good sauce recipe; thinking basil is the key ingredient, after tomatoes, of course.
